Seasonal Octopus at Lola


Even though Tom Douglas has completely saturated the Seattle food scene in the last several years, he still has a winner with his Greek-inspired restaurant Lola -- mainly due to the consistency of its seasonal variation on grilled octopus. The current spring version features spigarello (an Italian broccolini), leeks, and a dollop of yogurt cheese. Last spring's octopus salad (above) included fava beans and green onions. The octopus is always tender and charred, never rubbery -- yum!
